Lemon Thyme Tea Bread

This tasty and beautiful lemony sweet bread will convince anyone that Lemon Thyme isn’t just for chicken!

Ingredients

  • 3 ounces cream cheese, softened
  • 3 T. butter, softened
  • 2/3 c. sugar
  • 1 egg
  • 1 cup + 2 T. flour
  • 1 1/2 t. baking powder
  • 1/4 t. salt
  • 1/2 c. cold milk
  • 1 T. fresh lemon thyme
  • 1 t. grated lemon peel

       Lemon Glaze:

  • 1/2 c. powdered sugar
  • 1/2 t. grated lemon peel mixed with milk or lemon juice to make a drizzling glaze

Instructions

  1. Grease and lightly flour an 8x4x2 loaf pan.
  2. Beat cream cheese and butter until fluffy.
  3. Add sugar and mix well.
  4. Add egg and beat until just combined.
  5. Stir together: flour, baking powder and salt.
  6. Add to creamed mixture alternately with the milk, beating well.
  7. Stir in lemon thyme and lemon peel.
  8. Spread batter into loaf pan.
  9. Bake at 350 degrees for 45 minutes or until a toothpick inserted in the center comes out clean.
  10. Cool in pan on wire rack for ten minutes.
  11. Turn loaf out onto a plate and glaze loaf while still warm.
  12. Cool.
