Basil Garlic Eggs

Summary: A fast and easy microwave recipe that’s perfect every time!

Ingredients

  • 2 large eggs
  • 1/4 tsp. dried basil (or fresh equivalent)
  • garlic salt to taste (minced garlic maybe substituted – or try minced garlic chives)
  • pepper (optional)
  • Instructions

    1. Crack two eggs into a glass bowl (or other microwave safe option).
    2. Whisk together to break yolk and incorporate with whites.
    3. Add garlic salt and basil. Stir.
    4. Place in microwave for one minute. Because the yolks will swell while cooking, sure to use a large enough bowl so that they won’t spill over.
    5. After one minute, stir the egg mixture breaking up the hardened outer egg mixture.
    6. Return to microwave for 30-60 seconds more. Don’t over cook.
    7. Serve with a side of asparagus or other vegetable for a beautiful, tasty breakfast.
