Recipe: Beautiful Roasted Vegetables
Summary: Perfect side dish for everything from Thanksgiving Turkey to BBQ burgers!
- 5 white potatoes cubed with skins on3 sweet potatoes cubed with skins off
- 2 red onions chopped
- 2 red peppers chopped
- 1 medium butternut squash cubed
- 3 Tbs olive oil
- 1 tsp salt
- 2 to 3 tsp Rosemary leaves
- 1 tsp fresh ground pepper
- Toss all the vegetables in olive oil and sprinkle seasonings over top.
- Bake 400 for 30 minutes or until browned and slightly dehydrated.
