Preserving Herbs in Pastes

A convenient way to preserve herbs is to chop and blend them with enough oil to make a paste.  The paste can be stored in the refrigerator for up to a month or in the freezer for up to six months. Simply chop two cups of herb leaves and blend with 1/3 cup olive oil and store in glass jars. To use in recipes just plop spoonfuls into soups, stews, dressings and sauces.
