The essence of high summer! Let it be the main dish for a luncheon, or the perfect compliment to an evening BBQ. The perfect dish to highlight your summer garden!

Ingredients

  • 1 large package of dried egg noodles or any other dried pasta, cooked
  • 1 stick of butter
  • 2 zucchini, chopped
  • 2 summer squash, chopped
  • 1 red onion, diced
  • 1 sweet red pepper, diced
  • 1 cup broccoli tops
  • 1 garlic clove, minced
  • 3 fresh tomatoes, chopped
  • 1 handful basil leaves, chopped
  • a few leaves of other various fresh herbs such as, thyme, oregano, or lemon verbena
  • salt and pepper to taste1/2 cup fresh parmesan cheese

Instructions

  1. Cook and strain noodles, while noodles are in the strainer, melt the butter in the same pot.
  2. Add all the vegetables, except the tomatoes.
  3. Add the onion and garlic and sauté until tender.
  4. Add the noodles, salt, and pepper.
  5. Mix, then add the tomatoes and fresh herbs.
  6. Gently combine until warm.
  7. Top with grated parmesan and serve immediately.
